Smashed Avocado on Toast With Corn
I have made a few changes to my diet in the recent week. I've decided to cut back on meat for many reasons and began incorporating more vegetables in my diet to increase my focus and energy. This Sunday I recreated one of my favorite thing on the brunch menu at my favorite spot!
We are all familiar with the bland avocado on toast. What really brings my tastebuds through the roof is the creative add ons to this basic dish. The addition of corn gives the otherwise smooth textured guacamole some crunch! I've decide to add some hard boiled eggs for protein and goat cheese for some extra flavor.

Prep time: 5 minutes
Cook time: 5 to 10 minutes
Serves two:
2 Hass avocados
1 Roma tomato
1/2 a lime
1/2 red onion
2 eggs
Corn
Goat cheese
1/2 teaspoon of Salt
1/2 teaspoon of Pepper
1/2 teaspoon of Paprika
Slice two Hass avocados, place the content in a bowl
Chop half a red onion place its content in the bowl
Squeeze half a lime onto the content in the bowl
Begin mashing the avocados and mixing the ingredients together
Place two eggs to boil for 6 to 10 minutes
Add 1/2 a can of corn to avocado mixture
Mix until the mixture is smooth to creamy
Chop one Roma tomato into fine pieces
Chop hard boiled eggs into 4 pieces
Toast two slices of bread
Spread guacamole onto toast
Sprinkle chopped tomatoes and pieces of hard boiled egg onto toast
Sprinkle some goat cheese
Use a torch to toast the goat cheese
Sprinkle some paprika
